I've created a monster!

Okay, so it's not a real monster. It's my business, my pride and joy. This adventure that I've put myself and my wife into, onto, and through for the last 2 years. Funny thing is, it all began after we had lost everything, literally sold all of our possessions, and vowed to move back East, with nothing. I asked myself, if I could do one thing, everyday, and make it a job, what would it be? I didn't think for too long, rather I took the initiative and helped someone. In all honesty, it was just my wife and I, our truck, and our hands. We were task masters. We helped a close friend of ours, and then it snowballed. She told her friend, and then they told their friends, and so on. By the second month of "operation", we had 10 clients. Here we are 2 years later, and we're trucking along. My latest question to myself, and I'm grateful to be asking it, is; when is the workload enough to get employees, not to hire "friends", but to give someone under OR unemployed the chance to regain their strength in the workforce. I know I can get more work, I know that if I took on a few "helpers", I could suffice them with enough work to give them strength to get their own work. I could be a jumping board and eventually turn my business into something extravagant. My only question is, what's the best way to "hire" people? Is it better to have employees or independent contractors? One of my clients who's own business is in this same stage, has told me to give "seminars" where my wife and I would give a speech for a group of people, and they would take their own information and do with it as they please. I'm stuck, I've got people who are actively asking me if they could "help" me at work, but I need to know what to do to make it legal, safe, and hopefully non-binding to me or the company. GO!
